The first important decision you have to make as a novice in sailing is choosing a boat.
There are several boats on the market, an overview is available under the topic Available boats.
Certainly the most common boat currently (1/08) in Second Life is the Tako 3.3, designed by Kanker Greenacre. You can buy a Tako at several locations in SL, a list of places is here. You can also rent Takos for free at many places. So if you just want to peek into sailing and you are not sure if you will like it.....rent a boat.
The beginners course you find here assumes that you are using a Tako.

SYC Beginners class
There is a class for beginners in-world. The script for this class can be found here http://slsailing.com/sailing-lessons/beginners-class. The class itself is held every Sunday at noon SLT in the club house of the Starboards Yacht Club. It is a good opportunity to ask questions. Following the instructional class usually comes a "hands on" training where you can pair up with a coach who explains things to you and answers any questions you have. One favor, please. Even if you think you are beyond theory, please be there for the classroom session. That gives those people who organize this class a chance to gather enough coaches for the pupils who show up.
Gesture class
Nber Medici has written a course on how to use gestures. This course can be found under http://slsailing.com/sailing-lessons/gestures-class
